Homemade pineapple popsicles. Yum. Plus, so easy.

Here is all you need:

Pineapple (pureed and chopped pieces)

Popsicle mold (I got mine here)

Popsicle sticks (My mold came with some)

You can make these with any fruit you like that is ripe.

How to:

Cut up at least a cup of pineapple into chunks. Fill the molds with the chunks to the top.

Take the rest of the cut pineapple and puree in the blender until smooth.

Fill up the molds with the puree mixture.

Tap the molds when done to get rid of any air pockets.

Then add the top of the mold on and slide the popsicle sticks through their designated holes

Freeze for a couple of hours or overnight to ensure a solid popsicle.

My mold makes 10 popsicles. If you want 10 pineapple popsicles, I would get at least 2 ripe pineapples. You chop up some of the pineapple for texture and puree the rest. If you want lots of flavor use a lot of pineapple and when they are very ripe.

I ran out of pineapple puree at 6 popsicles. I looked to see what ripe fruit I had on hand. I had three peaches. So I cut up maybe half of one into chunks for texture  ( I stillest had some pineapple chunks to add too) and I pureed the rest. It was enough to fill the rest of the four popsicles. I filled the mold with pineapple and peach chunks first then added the peach puree. I then add the top of the mold on and slid the popsicle sticks through their designated holes. You can see in the picture the mixture kind of sunk a bit while getting frozen which is fine if your okay with a non-perfect looking popsicle. I am okay with less than perfect looking popsicles.

In 2013, I graduated college with a BA degree. Two weeks after graduation we were in Hawaii celebrating that school was finally finished. We were on our way to hike up to this huge waterfall when a local married couple were selling pineapple popsicles. They said they had a farm and were in major abundance of pineapples. They were hand made like this, wrapped in sandwich bags with a tie. This Hawaii pineapple popsicle was the inspiration for these and one of the best popsicles I have ever had.

These are a perfect summer treat for those upcoming sweltering hot days coming at us soon.
