Curry Chicken Three Ways. Chicken Curry Tea sandwiches were one of the menu items from my baby shower tea party. I love this in a high tea mix of assorted sandwiches but you don’t just have to be at a tea party to enjoy this salad.
I love it open face style on sliced apples. This is perfect for a weekday pick me up. It’s light but still filling. It’s perfect if you are trying to avoid carbs.
Or you can have it open face style on a slice of bread. I added a slice of cheese, some pea sprouts and avocado to this yummy sandwich.
If you are a traditionalist, you will love it this way, with the crusts cut off and a good ole’ cuppa tea.
Curry Chicken Salad Recipe:
1 Cooked Chicken Breast
1 celery stock
1 tablespoon of dijon mustard
2 tablespoons of mayonnaise
Salt + Pepper
1 teaspoon of curry seasoning
1 tablespoon of dried cranberries or raisins
1/2 an apple or 1/2 a cup of slice grapes
Add all ingredients to a bowl and mix until everything is combined.
Enjoy any way you like!
